- 1 large ripe avocado
- ½ cup frozen or canned corn, thawed or drained
- ¼ cup finely chopped red onion
- ¼ cup fresh cilantro
- 1 tablespoon lime juice, freshly squeezed
- ½ teaspoon cumin powder
- ¼ teaspoon chili powder
- Salt and black pepper to taste
- 4 large flour tortillas
Instructions
- In a mixing bowl, mash the avocado until smooth or chunky to your liking. Stir in lime juice.
- Add rinsed black beans, corn, red onion, cilantro, cumin powder, chili powder, salt, and pepper to the bowl; mix gently.
- Warm tortillas in a skillet or microwave if desired.
