  • ½ teaspoon salt
  • 1¼ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons apple cider
  • ¾ cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon or spice blend
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract (for glaze)
  • 12 tablespoons apple cider (for glaze)

Instructions

  1. Reduce 2 cups of apple cider in a saucepan until it’s about ¼ cup.
  2. Brown 20 tablespoons of unsalted butter until nutty in aroma and set aside to cool.
  3. Whisk together 2½ cups flour, 1 teaspoon baking powder, ¼ teaspoon baking soda, 1 teaspoon cornstarch, and spices in a bowl.
  4. Mix cooled brown butter with sugars, then add the egg, yolks, reduced cider, and vanilla extract.
  5. Gradually stir the dry mixture into the wet ingredients until just combined.
  6. Preheat your oven to 375°F (190°C) and bake cookies for 9-11 minutes.
  7. Cool slightly before coating in cinnamon sugar and glazing.
