- 1¼ cup light brown sugar

- 4 tablespoons unsalted butter, melted
- 2 tablespoons apple cider
- ¾ cup granulated sugar (for coating)
- 2 teaspoons ground cinnamon or spice blend
- 1 cup powdered sugar
- ½ teaspoon vanilla extract (for glaze)
- 1 – 2 tablespoons apple cider (for glaze)
Instructions
- Reduce 2 cups of apple cider in a saucepan until it’s about ¼ cup.
- Brown 20 tablespoons of unsalted butter until nutty in aroma and set aside to cool.
- Whisk together 2½ cups flour, 1 teaspoon baking powder, ¼ teaspoon baking soda, 1 teaspoon cornstarch, and spices in a bowl.
- Mix cooled brown butter with sugars, then add the egg, yolks, reduced cider, and vanilla extract.
- Gradually stir the dry mixture into the wet ingredients until just combined.
- Preheat your oven to 375°F (190°C) and bake cookies for 9-11 minutes.
- Cool slightly before coating in cinnamon sugar and glazing.
