Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 medium apples, peeled, cored, and diced

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, alternating with sour cream until just combined. Gently fold in the diced apples.
  5. Pour half of the batter into the prepared loaf pan and sprinkle with half of a cinnamon-sugar mixture (made from combining granulated sugar and ground cinnamon). Pour the remaining batter on top and finish with the rest of the cinnamon-sugar mixture.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.
