Ingredients
- 2 tomatoes
- 1/2 onion (divided)
- 2 garlic cloves (divided)
- 1 cup water (for sauce)
- 1 tbsp chicken bouillon (for sauce)
- 1/8 cup olive oil
- 2 cups long grain white rice
- 1 tbsp chicken bouillon (for rice)
- Pinch whole cumin
- 1.5 cups water (for rice)
Instructions
- Create the tomato sauce by cooking quartered tomatoes, a quarter onion, and one garlic clove in water until soft. Blend with additional water and chicken bouillon until smooth.
- In a large stock pot, heat olive oil over medium heat. Toast the rice for about 5 minutes.
- Add finely diced onion and cook for another four minutes until golden.
- Stir in minced garlic, remaining chicken bouillon, whole cumin, blended tomato sauce, and water.
- Cover the pot and cook on medium heat for 12 minutes. Let it rest covered for an additional 5 minutes before serving.
