Baked Feta Potatoes are a delightful side dish that perfectly combines the crispy texture of roasted potatoes with the creamy richness of baked feta cheese. Ingredients

  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 block (200g) feta cheese
  • 1 head of garlic
  • 1 lemon, quartered
  • Fresh basil for garnish
  • Salt
  • Black pepper
  • Dried thyme
  • Oregano
  • Red chili flakes

Instructions

  1. Preheat oven to 200C (390F).
  2. Wash and cube the baking potatoes. Par-boil in salted water for 6-8 minutes; drain and let steam dry.
  3. Transfer the potatoes to a baking dish. Drizzle with olive oil and sprinkle with thyme, oregano, salt, pepper, and chili flakes. Toss to coat evenly.
  4. Roast for 30-40 minutes until golden but not fully cooked.
  5. Add the feta (dipping one side in seasonings) and the head of garlic to the center of the tray. Squeeze half of the lemon juice over.
  6. Roast for another 15 minutes until everything is beautifully browned.
  7. Remove garlic; mash it after cooling slightly and mix with remaining lemon juice into the potatoes along with fresh basil.
  8. Drizzle honey over before serving.
