- 2 large baking potatoes
- 2 tbsp olive oil
- 1 block (200g) feta cheese
- 1 head of garlic
- 1 lemon, quartered
- Fresh basil for garnish
- Salt
- Black pepper
- Dried thyme
- Oregano
- Red chili flakes
Instructions
- Preheat oven to 200C (390F).
- Wash and cube the baking potatoes. Par-boil in salted water for 6-8 minutes; drain and let steam dry.
- Transfer the potatoes to a baking dish. Drizzle with olive oil and sprinkle with thyme, oregano, salt, pepper, and chili flakes. Toss to coat evenly.
- Roast for 30-40 minutes until golden but not fully cooked.
- Add the feta (dipping one side in seasonings) and the head of garlic to the center of the tray. Squeeze half of the lemon juice over.
- Roast for another 15 minutes until everything is beautifully browned.
- Remove garlic; mash it after cooling slightly and mix with remaining lemon juice into the potatoes along with fresh basil.
- Drizzle honey over before serving.
