  • 4 cups grated zucchini
  • 2 whole eggs
  • 1 cup panko bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 cups sharp white cheddar cheese
  • 1 cup mayonnaise
  • ¼ cup sour cream
  • ¼ cup drained zucchini relish (or any other favorite relish)
  • 2 tablespoons scallions minced fine
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon smoked paprika
  • ½ teaspoon white pepper
  • ½ teaspoon onion powder
  • 1 teaspoon kosher salt
  • 2 teaspoons finely grated garlic
  • ¼ cup scallions minced fine
  • Zest from ½ lemon
  • 4 tablespoons butter, melted

Instructions

  1. Grate the zucchini and place it in a colander with salt for 30 minutes to drain excess moisture.
  2. Preheat your oven to 425°F (220°C).
  3. In a mixing bowl, combine beaten eggs, garlic, scallions, panko breadcrumbs, Parmesan cheese, lemon zest, and cheddar cheese.
  4. Squeeze out any remaining liquid from the zucchini and mix it into the batter thoroughly.
  5. Line a baking sheet with parchment paper and lightly brush with melted butter.
  6. Form fritters by scooping about one ounce of the mixture onto the baking sheet and flattening them slightly.
  7. Brush the tops with remaining melted butter and bake for 12 minutes on each side until golden brown.
  8. For the dipping sauce, mix mayonnaise, sour cream, relish, scallions, Worcestershire sauce, smoked paprika, white pepper, and onion powder.
