Ingredients
- 4 cups grated zucchini
- 2 whole eggs
- 1 cup panko bread crumbs
- 2 tablespoons grated Parmesan cheese
- 2 cups sharp white cheddar cheese
- 1 cup mayonnaise
- ¼ cup sour cream
- ¼ cup drained zucchini relish (or any other favorite relish)
- 2 tablespoons scallions minced fine
- 2 teaspoons Worcestershire sauce
- ½ teaspoon smoked paprika
- ½ teaspoon white pepper
- ½ teaspoon onion powder
- 1 teaspoon kosher salt
- 2 teaspoons finely grated garlic
- ¼ cup scallions minced fine
- Zest from ½ lemon
- 4 tablespoons butter, melted
Instructions
- Grate the zucchini and place it in a colander with salt for 30 minutes to drain excess moisture.
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine beaten eggs, garlic, scallions, panko breadcrumbs, Parmesan cheese, lemon zest, and cheddar cheese.
- Squeeze out any remaining liquid from the zucchini and mix it into the batter thoroughly.
- Line a baking sheet with parchment paper and lightly brush with melted butter.
- Form fritters by scooping about one ounce of the mixture onto the baking sheet and flattening them slightly.
- Brush the tops with remaining melted butter and bake for 12 minutes on each side until golden brown.
- For the dipping sauce, mix mayonnaise, sour cream, relish, scallions, Worcestershire sauce, smoked paprika, white pepper, and onion powder.
