Instructions

  1. In a medium bowl, whisk together all-purpose flour, cake flour, baking powder, baking soda, salt, and cornstarch. Set aside.
  2. Using a stand mixer with a paddle attachment, beat the room-temperature butter with granulated sugar and brown sugar on medium speed until light and fluffy (about 2–3 minutes).
  3. Add in the egg, egg yolk, and vanilla extract; mix until smooth.
  4. Gradually incorporate the dry ingredients into the wet mixture on low speed until just combined.
  5. Gently fold in semi-sweet chocolate chips, milk chocolate chips, and chopped dark chocolate.
  6. Chill the dough in the refrigerator for at least one hour (up to 24 hours) for optimal thickness.
  7. Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper.
  8. Scoop large balls of dough (about 1/3 cup each) onto the prepared sheet, spacing them three inches apart.
  9. Bake for 15–18 minutes until edges are set but centers look slightly underbaked.
