  • 1 cup all-purpose flour
  • 3 large eggs (lightly beaten)
  • ¼ cup freshly chopped parsley
  • 8 tablespoons unsalted butter
  • Vegetable oil (for deep frying)
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt (or to taste)
  • ¼ teaspoon freshly ground black pepper (or to taste)
  • 2 tablespoons whole milk

Instructions

  1. Begin by placing the peeled and cubed Russet potatoes in a large pot. Cover with water and bring it to a boil over medium-high heat. Cook until the potatoes are tender, about 15–20 minutes. Drain well and return them to the pot.
  2. Using a masher or fork, mash the boiled potatoes until smooth. Add in the butter, garlic powder, sea salt, black pepper, whole milk, chopped parsley, provolone cheese, sharp cheddar cheese, and crumbled turkey bacon. Mix until everything is well combined.
  3. In a mixing bowl, beat one egg. Take small portions of the potato mixture and shape them into oval or round forms. Dip each croquette into flour first, then into beaten egg, followed by Panko breadcrumbs for coating.
  4. In a frying pan over medium heat, pour vegetable oil until it's about an inch deep. Allow it to heat up gradually; you can test if it's ready by dropping in a small piece of bread—if it sizzles, you're good to go!
  5. Carefully place a few croquettes into the hot oil at a time. Fry until they are golden brown on all sides, approximately 4–5 minutes per batch. Use a slotted spoon to transfer them onto paper towels for draining excess oil.
