  • 1 lb ground beef
  • Salt and pepper, to taste
  • 1/2 cup chopped dill pickles
  • 1 cup shredded iceberg lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onion
  • 3/4 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tbsp yellow mustard
  • 2 tbsp pickle juice

Instructions

  1. Cook rotini pasta according to package instructions until al dente. Drain and rinse under cold water; set aside to cool.
  2. In a skillet over medium heat, brown ground beef until fully cooked, breaking it into small crumbles. Season with salt and pepper, then drain excess fat and let cool.
  3. In a large mixing bowl, combine cooled pasta, cooked ground beef, chopped pickles, shredded lettuce, diced tomatoes, and diced onion.
  4. In a separate bowl, whisk together mayonnaise, ketchup, yellow mustard, pickle juice, and additional salt and pepper until smooth.
  5. Pour the dressing over the pasta mixture and gently toss until evenly coated.
  6. Cover and refrigerate for at least 30 minutes before serving to blend flavors.
