  • 2 ripe peaches, sliced
  • 1 cup crumbled feta cheese
  • 4 cups mixed greens
  • 1/4 cup chopped red onion
  • 1/4 cup chopped walnuts
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Rinse blueberries under cold water and pat dry.
  2. Wash peaches and slice into wedges; add to a mixing bowl with blueberries.
  3. Crumble feta cheese over the fruit mixture.
  4. Add washed mixed greens to the bowl.
  5. Chop red onion and sprinkle over the salad.
  6. Roughly chop walnuts and scatter on top.
  7. In a separate bowl, whisk together honey, balsamic vinegar, olive oil, black pepper, and salt.
  8. Drizzle dressing over the salad and gently toss to combine.
