Ingredients
- 1 tablespoon unsalted butter
- 75 grams finely diced apples (1 small apple)
- 1/4 teaspoon cinnamon
- 60 grams salted caramel
- 100 grams egg whites (room temperature)
- 1/4 teaspoon cream of tartar
- 60 grams granulated sugar
- 110 grams almond flour (sifted)
- 200 grams powdered sugar (sifted)
- 1–2 drops red food coloring
- 113 grams unsalted butter (room temperature)
- 180 grams powdered sugar
- 60 grams salted caramel
Instructions
- Prepare the apple pie filling by melting butter in a saucepan, then adding diced apples and cinnamon. Sauté until softened and stir in salted caramel. Let cool.
- Preheat oven to 150°C (300°F). Whip egg whites with cream of tartar until soft peaks form; gradually add sugar until stiff peaks form. Fold in sifted almond flour and powdered sugar mix along with red food coloring.
- Pipe rounds onto parchment-lined baking sheets and rest for 30 minutes before baking for about 15 minutes.
- Cool completely before preparing the salted caramel buttercream by beating unsalted butter and gradually mixing in powdered sugar and salted caramel until smooth.
- Assemble macarons by piping buttercream onto half of the shells, topping with apple pie filling, then sandwiching with another shell.
