  • 1 tablespoon unsalted butter
  • 75 grams finely diced apples (1 small apple)
  • 1/4 teaspoon cinnamon
  • 60 grams salted caramel
  • 100 grams egg whites (room temperature)
  • 1/4 teaspoon cream of tartar
  • 60 grams granulated sugar
  • 110 grams almond flour (sifted)
  • 200 grams powdered sugar (sifted)
  • 12 drops red food coloring
  • 113 grams unsalted butter (room temperature)
  • 180 grams powdered sugar
  • 60 grams salted caramel

Instructions

  1. Prepare the apple pie filling by melting butter in a saucepan, then adding diced apples and cinnamon. Sauté until softened and stir in salted caramel. Let cool.
  2. Preheat oven to 150°C (300°F). Whip egg whites with cream of tartar until soft peaks form; gradually add sugar until stiff peaks form. Fold in sifted almond flour and powdered sugar mix along with red food coloring.
  3. Pipe rounds onto parchment-lined baking sheets and rest for 30 minutes before baking for about 15 minutes.
  4. Cool completely before preparing the salted caramel buttercream by beating unsalted butter and gradually mixing in powdered sugar and salted caramel until smooth.
  5. Assemble macarons by piping buttercream onto half of the shells, topping with apple pie filling, then sandwiching with another shell.
