Ingredients

Scale
  • 4 pounds beef short ribs
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a mixing bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and black pepper until the sugar dissolves.
  3. Place the beef short ribs in a shallow dish and pour the marinade over them; marinate for at least 30 minutes or overnight for deeper flavor.
  4. Heat oil in a Dutch oven over medium-high heat and sear each side of the ribs for about 2–3 minutes until browned.
  5. Pour the marinade over the seared ribs. Cover and roast in the oven for about 3 hours until tender. For glazing, combine cornstarch and water to make a slurry; add it to the pot to thicken before applying it to the ribs and broiling for caramelization.
