Ingredients
- 4 pounds beef short ribs
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup rice vinegar
- 1/4 cup sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Preheat your oven to 300°F (150°C).
- In a mixing bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and black pepper until the sugar dissolves.
- Place the beef short ribs in a shallow dish and pour the marinade over them; marinate for at least 30 minutes or overnight for deeper flavor.
- Heat oil in a Dutch oven over medium-high heat and sear each side of the ribs for about 2–3 minutes until browned.
- Pour the marinade over the seared ribs. Cover and roast in the oven for about 3 hours until tender. For glazing, combine cornstarch and water to make a slurry; add it to the pot to thicken before applying it to the ribs and broiling for caramelization.
