Ingredients
- 1 Tbsp butter or olive oil
- 1 medium onion, diced
- 1 garlic clove, minced
- 1 celery stick, chopped
- 1 lb carrots, peeled and diced
- 1 lb potatoes, peeled and diced
- 2 ½ cups low-sodium vegetable broth
- 1 tsp Italian herbs
- ¼ tsp dried thyme
- ¼ tsp dried parsley (optional)

- ½ tsp fine salt
Instructions
- In a large pot over medium heat, melt the butter or olive oil. Add the diced onion with a pinch of salt and pepper; sauté for about 5 minutes until soft. Add garlic and cook for an additional minute.
- Stir in the diced carrots, potatoes, celery, Italian herbs, salt, and pepper. Cook for 2–3 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat to simmer; cover and cook for about 20 minutes.
- Allow soup to cool slightly before blending some of it until smooth using a stand blender or immersion blender.
- Return blended portion back to the pot; mix well and adjust seasoning if necessary.
- Serve hot with freshly ground black pepper and chopped parsley on top.
