Ingredients
- 4 large russet potatoes
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup chopped cilantro
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub and dry the potatoes. Pierce each potato several times with a fork.
- Rub potatoes with olive oil and sprinkle generously with salt and pepper.
- Bake the potatoes on a baking sheet for about 45 minutes until tender.
- While they bake, heat a skillet over medium heat, cook the ground beef until browned, then drain excess fat.
- Add taco seasoning and water according to packet instructions; simmer for about 5 minutes.
- Once baked, slice each potato open and fill with ground beef and shredded cheese.
- Return to the oven for another 5 minutes until the cheese melts.
- Top with sour cream, green onions, diced tomatoes, black olives, and cilantro before serving.
