Ingredients
- 2 small chicken breasts (1 pound)
- 1 red bell pepper
- 1 orange bell pepper
- 1 yellow bell pepper
- 1 red onion
- 1 large head Romaine lettuce (6 cups)
- 1 pint cherry tomatoes
- 2 avocados
- 3/4 cup sour cream or Greek yogurt
- 1/2 cup salsa verde
Instructions
- In a large freezer bag, mix olive oil, brown sugar, orange juice, lime juice, soy sauce, Dijon mustard, chili powder, ground cumin, garlic powder, onion powder, salt, smoked paprika, chipotle chili pepper, oregano, pepper, and mesquite liquid smoke. Reserve ¼ cup of marinade in another bag for veggies. Add sliced bell peppers and onions to the second bag.
- Place chicken in the first bag; turn to coat well. Marinate both bags in the refrigerator for at least four hours or overnight.
- In a medium bowl, whisk together sour cream (or Greek yogurt), salsa verde, mayonnaise, lime juice, minced garlic, salt, cumin, and pepper until smooth. Adjust seasoning as needed.
- Grill or sauté marinated chicken until cooked through (165°F). Chop lettuce and combine with cherry tomatoes and avocado in a large bowl. Add cooked chicken and vegetables on top; drizzle with dressing before serving.
