  • 1 medium zucchini
  • 3 garlic cloves
  • 1/4 cup light soy sauce
  • 1 tablespoon oyster sauce
  • Cooking oil
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)

Instructions

  1. Cut chicken into bite-sized pieces and marinate with cornstarch, soy sauce, sesame oil, sugar (or honey), vinegar (if using), and smashed garlic for at least 30 minutes.
  2. Heat cooking oil in a wok or large frying pan over medium-high heat.
  3. Stir fry garlic and marinated chicken for about 2 minutes until no longer translucent; set aside.
  4. Add zucchini slices to the pan; stir fry for about 5 minutes until tender.
  5. Return chicken to the pan, add oyster sauce, and mix well for another 2-3 minutes until thoroughly cooked.
