- 2 vegan gelatin sheets (4g)
- 200ml heavy cream
- 80g mascarpone
- 80g powdered sugar
- 120ml coconut milk
- 140g softened butter
- 160g all-purpose flour
- 25g unsweetened cocoa powder
- Grated coconut
- Gooey cocoa spread
Instructions
- Prepare the Coconut Mousse: Whip heavy cream and mascarpone until soft peaks form, adding powdered sugar gradually. Soak gelatin sheets and dissolve them in warm coconut milk before folding into the whipped mixture.
- Assemble in Molds: Fill hemisphere molds halfway with mousse, add gooey cocoa spread, then top with more mousse. Freeze for at least 6 hours.
- Make Cocoa Breton Shortbreads: Combine shortbread ingredients to form dough, chill, roll out, cut circles, and bake until firm.
