  • 200ml heavy cream
  • 80g mascarpone
  • 80g powdered sugar
  • 120ml coconut milk
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • Grated coconut
  • Gooey cocoa spread

Instructions

  1. Prepare the Coconut Mousse: Whip heavy cream and mascarpone until soft peaks form, adding powdered sugar gradually. Soak gelatin sheets and dissolve them in warm coconut milk before folding into the whipped mixture.
  2. Assemble in Molds: Fill hemisphere molds halfway with mousse, add gooey cocoa spread, then top with more mousse. Freeze for at least 6 hours.
  3. Make Cocoa Breton Shortbreads: Combine shortbread ingredients to form dough, chill, roll out, cut circles, and bake until firm.
  4. Final Assembly: Unmold domes onto cooled shortbreads, thaw at room temperature for 2 hours, and garnish with grated coconut.
