  • 15 oz sweet corn, drained
  • ½ cup red onion, diced
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup mayonnaise
  • ½ cup sour cream, or kefir or Greek yogurt
  • 2 tablespoons dry Ranch mix
  • 2 tablespoons lemon juice
  • ¼ cup honey, softened or warmed
  • ¼ teaspoon salt

Instructions

  1. In a large bowl, combine broccoli, cauliflower, carrots, corn, red onion, and cheddar cheese. Mix well.
  2. In a medium bowl, blend mayonnaise and sour cream with Ranch mix until smooth; taste and adjust seasoning.
  3. In a small bowl, whisk together mayonnaise, sour cream (or kefir/Greek yogurt), lemon juice, honey, and salt until smooth.
  4. Add your chosen dressing to the vegetable mix and stir gently to coat evenly. Serve immediately or chill before serving.
