  • 1 large sweet onion (chopped)
  • 34 cloves garlic (minced)
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans (drained)
  • 7 ounces chopped green chiles
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 8 ounces cream cheese

Instructions

  1. In a large pot over medium heat, melt the butter. Add chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for another minute.
  2. Add ground cumin and dried oregano; mix well before adding the boneless chicken breasts. Cook for about 5 minutes on each side until lightly browned.
  3. Pour in chicken broth, drained cannellini beans, chopped green chiles, and frozen corn; stir gently.
  4. Bring to a boil, then reduce heat to low and cover; simmer for about 25 minutes until chicken is fully cooked.
  5. Remove chicken breasts, shred them with two forks and return to the pot. Stir in cream cheese cubes until melted and creamy.
