  • 45 boneless, skinless chicken thighs
  • 1 large egg
  • 2 tbsp flour
  • 3 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp minced garlic
  • ½ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ cup olive oil
  • ½ cup shaved Parmesan cheese
  • 2 tbsp fresh lemon juice
  • 3 anchovy fillets
  • 1 tbsp minced garlic
  • 1 tsp Dijon mustard
  • 1 tsp red apple vinegar
  • ½ tsp Worcestershire sauce
  • ½ tsp black pepper
  • Salt, to taste
  • 1 cup panko breadcrumbs
  • 4 tbsp unsalted butter
  • Pinch of salt

Instructions

  1. Marinate chicken thighs in the marinade mixture for at least 20 minutes.
  2. Toast panko in melted butter over medium-low heat until golden brown; set aside.
  3. Blend all dressing ingredients until smooth.
  4. Fry marinated chicken in hot canola oil until golden brown (about 8–10 minutes). Drain on a wire rack.
  5. Mix romaine lettuce with Caesar dressing, toasted panko, and Parmesan cheese.
  6. Assemble by spreading dressing on croissant bottoms; add chicken and salad mixture before topping with croissant tops.
