  • 23 pounds boneless chuck roast
  • 1 tablespoon avocado oil or neutral oil (plus more for taco frying)
  • Coarse ground salt and fresh ground pepper
  • 4 dried Guajillo chiles
  • 56 Chipotle chilis in adobo
  • 1 small red onion (thinly sliced)
  • 8 whole cloves garlic (smashed)
  • 32 ounces beef stock
  • 1 tablespoon tomato paste
  • 14.5 ounce can Fire roasted diced tomatoes
  • ¼ cup apple cider vinegar
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 cinnamon stick
  • 3 dry bay leaves
  • 1 teaspoon smoked paprika
  • ½ tablespoon fresh grated ginger
  • 1 teaspoon ground coriander
  • Corn or flour tortillas
  • Lime wedges
  • Fresh cilantro leaves
  • Diced white onion
  • Shredded Oaxacan cheese (or Italian cheese)

Instructions

  1. Sear the seasoned beef in avocado oil in a cast iron skillet for about 5-6 minutes on each side until browned.
  2. Transfer seared beef to a crockpot and add all remaining ingredients. Stir well to combine.
  3. Cover and cook on low heat for 8 hours.
  4. Shred the beef after cooking, blend the sauce until smooth, and return it to the crockpot.
  5. Combine shredded beef with sauce before serving in tortillas topped with cilantro, onions, and lime juice.
