  • 1 can black beans (drained and rinsed)
  • 1 can corn (undrained)
  • 10 ounces Rotel tomatoes with green chilis (undrained)
  • 8 ounces cream cheese
  • 1 packet ranch seasoning
  • 1 teaspoon ground cumin
  • 1 Tablespoon chili powder
  • 1 teaspoon onion powder
  • ½ cup water
  • Cheese (for topping)
  • Sour cream (for topping)
  • Avocados (for topping)
  • Fresh tomatoes (for topping)
  • Tortilla chips (for topping)

Instructions

  1. Spray the bottom of the slow cooker with nonstick cooking spray.
  2. Place chicken breasts at the bottom of the crockpot.
  3. Add black beans, corn, Rotel tomatoes, ranch seasoning, cumin, chili powder, onion powder, and water; mix well.
  4. Place block of cream cheese on top without mixing.
  5. Cook on low for 6-8 hours or high for 4 hours until chicken is cooked through.
  6. Stir to shred chicken before serving and add desired toppings.
