  • 312.5 ml warm milk
  • 37.5 g granulated sugar
  • 12.5 g salt
  • 312.5 g unsalted butter (cold)
  • 5 eggs (beaten for egg wash)

Instructions

  1. Activate the yeast by mixing it with warm milk; let sit until frothy (5-10 minutes).
  2. Mix flour, sugar, and salt in a bowl; add yeast mixture and form a rough dough.
  3. Knead the dough on a floured surface until smooth (5-7 minutes).
  4. Chill the dough wrapped in plastic for at least 1 hour.
  5. Pound cold butter into a flat rectangle between parchment paper and chill if necessary.
  6. Roll out chilled dough into a rectangle, place butter in the center, fold over sides, and roll out again; repeat folding two more times.
  7. Cut laminated dough into triangles and roll each from the wide end to the point.
  8. Place shaped croissants on a baking sheet and let them rise until doubled (1-2 hours).
  9. Preheat oven to 200°C (400°F), brush croissants with egg wash, and bake until golden brown (15-20 minutes).
