  • 260 g flour
  • 25 g white sugar
  • 5 g salt
  • 5 g yeast
  • 70 g milk
  • 70 g water
  • 150 g unsalted butter (divided)
  • 400 g white sugar (for coating)

Instructions

  1. Prepare the butter layer by shaping 125 g cold unsalted butter into a rectangle and refrigerating until hard.
  2. In a mixing bowl, combine flour, sugar, yeast, and salt. Add milk, water, and 25 g unsalted butter; mix until fully combined. Form into a ball, wrap in plastic, and refrigerate overnight.
  3. Roll out the dough into a rectangle twice the length of the refrigerated butter layer; encase the butter within the dough.
  4. Roll out to triple its length; perform folds and refrigerate between folds as instructed in the full recipe.
  5. Cut into strips and assemble by rolling two strips together before placing them in greased muffin tins.
  6. Allow to proof for 2–3 hours, then bake at 356°F (180°C) for about 20 minutes until golden brown.
  7. Cool slightly before rolling in sugar.
