Ingredients
- 260 g flour
- 25 g white sugar
- 5 g salt
- 5 g yeast
- 70 g milk
- 70 g water
- 150 g unsalted butter (divided)
- 400 g white sugar (for coating)
Instructions
- Prepare the butter layer by shaping 125 g cold unsalted butter into a rectangle and refrigerating until hard.
- In a mixing bowl, combine flour, sugar, yeast, and salt. Add milk, water, and 25 g unsalted butter; mix until fully combined. Form into a ball, wrap in plastic, and refrigerate overnight.
- Roll out the dough into a rectangle twice the length of the refrigerated butter layer; encase the butter within the dough.
- Roll out to triple its length; perform folds and refrigerate between folds as instructed in the full recipe.
- Cut into strips and assemble by rolling two strips together before placing them in greased muffin tins.
- Allow to proof for 2–3 hours, then bake at 356°F (180°C) for about 20 minutes until golden brown.
- Cool slightly before rolling in sugar.
