  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 2 cups water
  • 2 teaspoons Italian seasoning
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 8 oz uncooked lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. In a large pot over medium heat, cook the meat until browned. Drain excess fat if needed.
  2. Add chopped onion and sauté until translucent. Stir in minced garlic and cook until fragrant.
  3. Pour in crushed tomatoes, chicken broth, and water. Season with Italian seasoning, sugar, salt, and pepper; bring to a simmer.
  4. Add broken lasagna noodles and cook until al dente according to package instructions.
  5. In a separate bowl, mix ricotta cheese with half of the mozzarella and Parmesan cheese.
  6. Stir the cheese mixture into the soup until creamy and well combined.
  7. Serve hot in bowls topped with remaining mozzarella and fresh basil.
