This quick and healthy recipe is perfect for busy weeknights or special occasions, taking less than 30 minutes from prep to plate. The cod fillets are tender and flaky, making them an excellent protein choice for any meal. Serve this dish alongside rice, sweet potatoes, or steamed vegetables for a nutritious and satisfying dinner that the whole family will enjoy.

Ingredients

Scale
  • 4 cod fillets (56 oz each)
  • ¼ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1½ tsp fresh grated ginger
  • 2 cloves garlic (minced)
  • Green onions and sesame seeds (for garnish)

Instructions

  1. In a mixing bowl, whisk together soy sauce, sesame oil, honey or maple syrup, rice vinegar, garlic, and ginger to create the marinade.
  2. Place cod fillets in a shallow dish and pour the marinade over them. Ensure they are well coated and let them marinate for 15-30 minutes.
  3. For baking, preheat your oven to 400°F (200°C). Lay marinated cod on a parchment-lined baking dish and bake for 12-15 minutes until flaky.
  4. For pan-searing, heat oil in a skillet over medium heat. Cook cod for about 3-4 minutes on each side, basting with additional marinade.
  5. Serve garnished with green onions and sesame seeds alongside your favorite sides.
