Ingredients
- 1 kg green unripe tomatoes
- 500 g cooking apples
- 500 g onions
- 200 g sultanas
- 1 tsp chili flakes
- 15 g fresh ginger (grated)
- 2 tsp salt
- 400 ml cider vinegar
- 400 g light brown sugar
- 2 tsp coriander seeds
- 2 tsp mustard seeds
- 2 tsp black peppercorns
Instructions
- Dice the green tomatoes, onions, and apples into even pieces for uniform cooking.
- In a large preserving pan, combine the diced vegetables and fruits with sultanas, chili flakes, salt, grated ginger, and cider vinegar. Mix well before adding sugar.
- Place coriander seeds, mustard seeds, and black peppercorns in a spice bag or muslin square and add to the pan.
- Bring the mixture to a boil over medium heat; then reduce to low and simmer gently for 1½ to 2 hours.
- Stir occasionally to prevent sticking. Check for desired consistency by drawing a spoon through the mixture; if it parts easily, it's done.
- Remove the spice bag and ladle hot chutney into sterilized jars, filling them about 6mm from the top. Seal tightly with lids.
