  • 1 pound lean ground turkey (or lean ground beef)
  • 2 medium zucchini, cubed
  • 1 bell pepper, cut into pieces
  • ½ onion, diced
  • 5 ounces fresh baby spinach
  • Olive or avocado oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon paprika
  • 1 teaspoon garlic (minced)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried basil
  • ½ cup water
  • 2 tablespoons tomato paste

Instructions

  1. In a large skillet over medium-high heat, add the ground turkey (or beef). Break it apart with a spatula and cook until browned.
  2. Season with salt, black pepper, chili powder, oregano, paprika, and minced garlic. Sauté for an additional minute before removing from the skillet.
  3. Lower the heat to medium and add oil to the skillet. Add zucchini, onion, and bell pepper; season with salt, garlic powder, onion powder, oregano, basil, paprika, and black pepper. Sauté until vegetables are tender.
  4. Return the meat mixture to the skillet along with water and tomato paste. Stir in spinach and simmer until warmed through.
