Ingredients
- 1 pound ground turkey or chicken
- 3 large carrots, peeled and chopped
- 2 ribs celery, finely chopped
- 1 medium onion, finely chopped
- 1 red bell pepper, finely chopped
- 4 cloves garlic, minced
- 1½ teaspoons Italian seasoning
- 1½ teaspoons salt
- 7 cups low-sodium chicken broth
- 1½ cups dry ditalini pasta
- 1 cup fresh spinach, chopped
Instructions
- In a large soup pot or Dutch oven over medium-high heat, cook the ground turkey (or chicken) with the carrots, celery, onion, and bell pepper until browned and the onion is translucent (about 5 minutes).
- Add minced garlic, Italian seasoning, and salt; cook for an additional minute.
- Pour in the low-sodium chicken broth and scrape any browned bits from the bottom of the pot.
- Bring to a simmer, then cover and cook on medium-low for about 10 minutes until vegetables are nearly tender.
- Stir in ditalini pasta and continue cooking for about 10 minutes until al dente.
- Add chopped spinach at the end; taste and adjust seasonings if needed before serving.
