  • 1 pound ground turkey or chicken
  • 3 large carrots, peeled and chopped
  • 2 ribs celery, finely chopped
  • 1 medium onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 4 cloves garlic, minced
  • 1½ teaspoons Italian seasoning
  • 1½ teaspoons salt
  • 7 cups low-sodium chicken broth
  • 1½ cups dry ditalini pasta
  • 1 cup fresh spinach, chopped

Instructions

  1. In a large soup pot or Dutch oven over medium-high heat, cook the ground turkey (or chicken) with the carrots, celery, onion, and bell pepper until browned and the onion is translucent (about 5 minutes).
  2. Add minced garlic, Italian seasoning, and salt; cook for an additional minute.
  3. Pour in the low-sodium chicken broth and scrape any browned bits from the bottom of the pot.
  4. Bring to a simmer, then cover and cook on medium-low for about 10 minutes until vegetables are nearly tender.
  5. Stir in ditalini pasta and continue cooking for about 10 minutes until al dente.
  6. Add chopped spinach at the end; taste and adjust seasonings if needed before serving.
