  • 70 g egg whites (at room temperature)
  • 75 g fine granulated sugar
  • ¼ teaspoon cream of tartar (optional)
  • ¼ teaspoon coarse kosher salt
  • Gel food coloring (optional)

Instructions

  1. Preheat your oven to 160°C (320°F) and line baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar in a bowl.

  7. Bake one sheet at a time for about 18 minutes; cool completely before removing from sheets.
  8. Prepare your filling by whisking egg yolks and sugar, heating milk, then combining everything until smooth.
  9. Assemble macarons by pairing shells, piping filling onto one, and sandwiching with another shell.
