  • 1/4 cup grated Parmesan cheese
  • 2 tbsp butter
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Red pepper flakes (optional, for a little kick)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add cubed chicken and season with salt, pepper, and Italian seasoning. Cook until browned and cooked through (6-8 minutes). Remove from skillet.
  2. In the same skillet, melt butter and sauté minced garlic and chopped onion for about 3-4 minutes until softened.
  3. Add broccoli florets and cook for 5 minutes until bright green and tender-crisp.
  4. Stir in fresh spinach until wilted (about 2-3 minutes).
  5. Pour in chicken broth and heavy cream; bring to a simmer while stirring continuously.
  6. Mix in Parmesan cheese until melted and smooth.
  7. Return cooked chicken to the skillet and stir everything together to coat well.
  8. Serve hot over rice, pasta, or cauliflower rice.
