- 12 oz rigatoni pasta
- 2 tbsp olive oil
- 4 tbsp butter
- 5 cloves garlic, minced
- 2 cups baby spinach
- 1½ cups heavy cream
- 1 (8 oz) block cream cheese, softened and cubed
- 1¼ cups grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper, to taste
- ¼ cup reserved pasta water, as needed
- Chopped fresh parsley, for garnish
Instructions
- Cook rigatoni in salted water until al dente; reserve ¼ cup pasta water and drain.
- Season chicken with salt, pepper, garlic powder, and onion powder. In a skillet over medium-high heat, sauté chicken in olive oil and butter until golden brown (about 6–7 minutes). Remove from skillet.
- In the same skillet, reduce heat; add remaining butter and minced garlic. Sauté for about 30 seconds before adding spinach until wilted.
- Pour in heavy cream and stir in cream cheese until smooth. Gradually incorporate Parmesan and mozzarella cheeses until thickened; use reserved pasta water to adjust consistency if necessary.
- Combine cooked rigatoni and chicken in the sauce; stir gently to coat evenly.
- Serve hot, garnished with parsley and additional Parmesan if desired.
