Ingredients
- 1/4 cup tahini
- 1 1/2 pounds boneless skinless chicken thighs (or breasts)
- 2 tablespoons olive oil
- 3 tablespoons water
- Juice and zest of 1 lemon
- 1 teaspoon grated garlic
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- 1 cup white or brown rice
- 1 1/2 cups water (2 cups if using brown rice)
- 1 tablespoon chopped fresh dill
- 1 teaspoon lemon zest
- Salt to taste
- 1 tablespoon fresh lemon juice
Instructions
- In a glass measuring cup, whisk together tahini, olive oil, water, lemon juice and zest, garlic, cumin, smoked paprika, salt, and pepper.
- Place chicken in a freezer bag and pour the marinade over it. Seal the bag and massage to coat well. Marinate for 1 to 4 hours.
- Preheat the grill to medium-high heat (400–425°F). Clean and oil the grates.
- Grill the marinated chicken for 4–6 minutes per side until cooked through (internal temperature should reach 165°F). Let rest for 5–10 minutes before serving.
- Cook the rice according to package instructions. Before bringing it to a boil, add in dill and lemon zest. Once cooked, stir in lemon juice and let it steam for 10 minutes.
