Ingredients
- 2 large egg whites (room temperature)
- 1/4 tsp cream of tartar
- 1/2 cup white sugar

- 2 cups confectioner’s sugar
- 2 tbsp milk
- Purple gel food coloring
- Black decorating frosting
Instructions
- Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the egg whites with an electric mixer on low speed. Add cream of tartar and gradually incorporate sugar while increasing speed to high. Continue until bright white with semi-stiff peaks.
- Pipe mounds of meringue onto the lined baking sheet using a piping bag fitted with a Wilton tip #12.
- Bake for 2 hours, then leave in the oven for an additional 30 minutes after turning it off.
- Prepare buttercream by mixing softened butter, confectioners’ sugar, and milk until smooth; add purple gel food coloring.
- Frost each cupcake generously with purple buttercream using a piping bag fitted with Wilton tip #12.
- Decorate cooled meringue ghosts with black decorating frosting and place one on each cupcake.
