Ingredients

  • 175 g Baking spread (or butter)
  • 175 g Caster sugar
  • 3 Eggs (large)
  • 2 tsp Vanilla extract
  • 175 g Self raising flour
  • 25 g Black food colouring
  • 200 g Butter (softened, unsalted)
  • 400 g Icing sugar
  • 1 tsp Vanilla extract
  • 12 tbsp Milk
  • Green food colouring
  • Yellow food colouring
  • 150 g Tinned custard
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3. Line a cupcake tin with black cupcake cases.
  2. Beat together the baking spread and caster sugar until fluffy. Add eggs and vanilla, mixing well.
  3. Fold in self-raising flour, followed by black food coloring until evenly mixed.
  4. Divide batter into cases and bake for 25–30 minutes until a skewer comes out clean. Cool completely.
  5. Core each cupcake and fill with colored custard.
  6. For the buttercream, mix softened butter and icing sugar, adding vanilla extract and color until bright green.
  7. Pipe or spoon frosting onto cupcakes and decorate with candy eyes and sprinkles.
