Ingredients

- 2 tbsp coconut oil (or unsalted butter)
- 1 large egg
- 1 tsp vanilla extract
- ½ cup pure maple syrup
- 1 cup grated zucchini
Instructions
- In a medium bowl, whisk together oats, flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix melted coconut oil (or butter), egg, and vanilla until combined. Stir in pure maple syrup.
- Gradually add the dry ingredients to the wet mixture and stir until just combined. Fold in grated zucchini.
- Chill the dough in the refrigerator for 30 minutes.
- Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
- Drop rounded scoops of dough onto the sheet and flatten them slightly.
- Bake for 11-14 minutes until golden around the edges. Cool on the pan for 10 minutes before transferring to a wire rack.
