  • 12 oz fresh raspberries
  • 2 large fresh mangoes, cubed
  • 1 lb fresh strawberries, cubed
  • 1 lb green grapes, halved
  • 1 lb red grapes, halved
  • 4 cups apple juice
  • 4 packets original unflavored plant-based gelatin
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Rinse and prepare all fruits: wash raspberries, cube mangoes, and halve grapes.
  2. Lightly spray a bundt pan with pan spray and wipe out excess.
  3. In a medium bowl, combine 1 cup of apple juice with the gelatin. Set aside.
  4. Heat the remaining 3 cups of apple juice in a small saucepan until boiling; stir in sugar and lemon juice until dissolved.
  5. Pour hot juice into the bowl containing gelatin mixture. Whisk until fully dissolved and let cool.
  6. Layer prepared fruits into the bundt pan in the following order: raspberries, mangoes, strawberries, green grapes, red grapes.
  7. Slowly pour the cooled gelatin mixture over the layered fruits until filled to the top.
  8. Refrigerate for 3-4 hours or until set.
  9. To serve, briefly immerse the bundt pan in warm water to loosen before unmolding onto a serving plate.
