  • 3 pounds beef chuck roast, cut into 1" cubes
  • 2 tablespoons neutral oil
  • 1 red onion, finely diced
  • 2 jalapeños, finely diced
  • 3 garlic cloves, minced
  • 2 chipotle peppers in adobo sauce, finely diced
  • 1 tablespoon dark brown sugar
  • 1 tablespoon ground cumin
  • 5 tablespoons gochujang (Korean chili paste)
  • 1 (15 oz) can fire-roasted tomatoes
  • 2 cups beef broth

Instructions

  1. In a Dutch oven, heat the oil over high heat. Season beef with salt and pepper and sear until browned on all sides. Transfer to a plate.
  2. Reduce heat to medium. Add onion and jalapeños; cook until charred. Stir in garlic, chipotle peppers, brown sugar, cumin, and seasonings.
  3. Whisk gochujang with beef broth; pour into the pot along with tomatoes. Scrape the bottom to release flavor bits.
  4. Return beef to the pot; bring to a simmer. Cook for 2–3 hours until meat is tender.
  5. Adjust spice level by adding more gochugaru if desired.
