  • 5 green onions (chopped, green parts only)
  • ½ cup crumbled cotija cheese
  • ½ cup diced red onion
  • ⅓ cup chopped cilantro
  • 1 jalapeno (diced)
  • 3 tablespoons mayonnaise
  • Juice of 1 lime (about 2 tablespoons)
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. In a medium bowl, combine corn, green onions, cotija cheese, red onion, cilantro, and jalapeno.
  2. In a small bowl, mix together mayonnaise, garlic, lime juice, salt, and black pepper for the dressing.
