  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup small pasta (such as ditalini or elbows)
  • Grated Parmesan cheese, for serving
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in diced onion, garlic, carrot, and celery. Cook until softened (about 5 minutes).
  4. Add diced tomatoes with juice, cannellini beans, and kidney beans.
  5. Pour in the beef broth and mix well.
  6. Season with oregano, basil, salt, and pepper to taste.
  7. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes.
  8. In the last 10 minutes of cooking, add small pasta and continue simmering until tender.
