- 1 tbsp olive oil
- 4 cloves garlic
- 1 cup long grain white rice
- 2 1/4 cups chicken broth
- 1/2 cup heavy cream
- Zest and juice of 1 lemon
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1 tsp Cajun seasoning
- 1/2 tsp smoked paprika
- 1/4 tsp red pepper flakes
- 1 tsp Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken pieces with salt, pepper, Cajun seasoning, and smoked paprika.
- In a large deep skillet over medium-high heat, heat olive oil and 1 tbsp butter. Add chicken and cook until golden brown (5–7 minutes). Remove and set aside.
- Melt remaining butter in the same skillet; add minced garlic and red pepper flakes, cooking until fragrant (about 1 minute).
- Stir in uncooked rice; toast for 1–2 minutes.
- Pour in chicken broth and lemon juice; bring to boil then reduce heat to low. Cover and simmer for 15–18 minutes until rice is tender.
- Stir in heavy cream, lemon zest, Parmesan cheese, and Italian seasoning; simmer for another 2–3 minutes.
- Return chicken to the pan; heat through before serving.
