- 1/4 cup pistachios (salted & roasted)
- 3 tablespoons red onion, minced
- 1/3 cup chicken sparkling grape juice vinegar

- 2 teaspoons dijon mustard
- 2 tablespoons honey
- Salt, pepper, and chili flakes (to taste)
Instructions
- Crush pistachios and set aside.
- Wash, dry, and slice peaches thinly; set aside.
- Mince red onions.
- In a jar or bowl, mix olive oil, minced red onion, chicken sparkling grape juice vinegar, honey, and Dijon mustard; season with salt, pepper, and chili flakes.
