Ingredients

  • 2 ripe peaches
  • 8 ounces burrata
  • 1/4 cup pistachios (salted & roasted)
  • 3 tablespoons red onion, minced
  • 1/3 cup chicken sparkling grape juice vinegar
  • 1/2 cup extra virgin olive oil
  • 2 teaspoons dijon mustard
  • 2 tablespoons honey
  • Salt, pepper, and chili flakes (to taste)

Instructions

  1. Crush pistachios and set aside.
  2. Wash, dry, and slice peaches thinly; set aside.
  3. Mince red onions.
  4. In a jar or bowl, mix olive oil, minced red onion, chicken sparkling grape juice vinegar, honey, and Dijon mustard; season with salt, pepper, and chili flakes.
  5. Shake or whisk until well combined.
  6. Place baby arugula on a serving platter and top with sliced peaches and torn burrata.
