  • 4 medium ripe peaches, sliced thin
  • 8 ounces spring mix, roughly chopped or torn bite-size
  • 12 basil leaves, sliced very thin or torn
  • 4 ounces mozzarella pearls, ciliegine, bocconcini – halved as needed
  • 24 ounces turkey slices, torn bite-size
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon kosher salt, plus more to taste
  • 1/8 teaspoon freshly ground black pepper, plus more to taste
  • 2 tablespoons balsamic glaze

Instructions

  1. Place the sliced peaches in a mixing bowl.
  2. Drizzle with olive oil and lemon juice.
  3. Sprinkle with salt and pepper.
  4. Toss well to coat all slices evenly.
  5. On a large platter or in the same mixing bowl, layer the spring mix as a base.
  6. Add the prepared peaches on top of the greens.
  7. Layer halved mozzarella pearls next.
  8. Scatter torn turkey slices throughout.
  9. Finally, add the sliced basil over everything.
