  • 4 mini pumpkins (optional, or ramekins)
  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, whisk together egg yolks, granulated sugar, and vanilla until smooth.
  3. In a saucepan over medium heat, combine heavy cream, pumpkin puree, spices, and salt. Heat until simmering then remove from heat.
  4. Gradually pour the warm cream mixture into the egg mixture while whisking constantly to avoid curdling.
  5. Pour custard into ramekins or hollowed mini pumpkins.
  6. Place them in a baking dish and fill it halfway with hot water for a water bath.
  7. Bake for about 30 minutes until set but slightly jiggly in the center.
  8. Cool at room temperature and refrigerate for at least 2 hours before serving.
  9. Before serving, sprinkle sugar on top and caramelize using a kitchen torch.
