  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar (for topping)
  • 1/4 cup chopped pecans (for topping)
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a medium-sized bowl, stir together flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves. Set aside once mixed well.
  3. In a smaller bowl, mix together pumpkin puree, milk, melted butter (or vegetable oil), and vanilla. Pour these wet ingredients into the dry mixture and stir until you achieve a thick batter. Pour this batter into a small 8-inch casserole dish.
  4. In a separate bowl, combine granulated sugar, brown sugar, and chopped pecans. Spread this mixture evenly over the top of your batter in the casserole dish. Carefully pour hot water over everything without stirring!
  5. Place your casserole dish on a baking sheet and bake for about 40 minutes or until the middle is set. Once done, cool for 5-10 minutes before serving.
