- 1 lb penne pasta
- 1 lb boneless, skinless chicken breast
- 2 tbsp olive oil
- 1 red bell pepper
- 1 green bell pepper
- ½ red onion
- 3 cloves garlic
- 2–3 jalapeños
- 4 tbsp butter
- ¼ cup all-purpose flour
- 2 cups milk or half-and-half
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the penne in salted boiling water until al dente; drain and set aside.
- Season the chicken with Cajun seasoning. In a skillet, heat 1 tbsp olive oil over medium-high heat, cook chicken until browned (5-7 minutes). Transfer to a plate.
- In the same skillet, add remaining olive oil and sauté sliced bell peppers, onion, garlic, and jalapeños for about 5 minutes.
- Melt butter in the skillet; whisk in flour for 1-2 minutes. Gradually add milk, stirring until smooth; bring to a simmer.
- Stir in Parmesan cheese until melted; combine with pasta, chicken, and sautéed vegetables. Toss to coat well.
- Serve hot garnished with parsley.
