Ingredients
Scale
- 3 cups bread flour
- 1/4 cup sugar
- 1 teaspoon instant yeast
- 1/2 teaspoon salt
- 1 cup warm whole milk
- 1/3 cup warm heavy cream
- 18 ounces sweetened red bean paste
- 1 egg
- 1 egg yolk
- Sesame seeds (for garnish)
Instructions
- In a stand mixer, combine bread flour, sugar, salt, instant yeast, and milk powder (if using). Gradually mix in warm milk and cream along with the egg. Knead on low speed for about 10 minutes until the dough is tacky. Cover and let rise for about 2 hours until doubled.
- Divide the risen dough into nine equal pieces and shape each into a ball. Flatten each ball into a circle, add a portion of red bean paste in the center, fold to seal, and smooth out seams.
- For an attractive flower shape, make slits around the edges before allowing the buns to rise again for 30 minutes.
- Preheat oven to 350°F (175°C). Brush each bun with an egg wash and sprinkle sesame seeds. Bake for about 20 minutes until golden brown.
