- 2 cups chopped bell peppers (any color)
- 2 cups chopped zucchini
- 1 cup chopped onion
- 4 cups chopped seeded peeled tomatoes
- 3 cups white vinegar
- 2 cups granulated sugar
- 1 tablespoon mustard seeds
- 1 teaspoon turmeric
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1 teaspoon ground cloves
Instructions
- Prepare the vegetables by dicing cucumbers, zucchini, onion, and peppers. Soak them in a large bowl with water and pickling salt for at least 8 hours.
- Rinse the vegetables under cold water using a colander to remove excess salt.
- Chop tomatoes, removing seeds for a smoother consistency.
- In a large saucepan over medium heat, combine tomatoes, vinegar, mustard seeds, turmeric, cinnamon, allspice, and ground cloves. Stir until boiling.
- Lower the heat and simmer for 30 minutes.
- Add drained vegetables and sugar; bring back to a boil then simmer for another 20 minutes.
- Fill sterilized jars with the relish mixture up to 1/2 inch from the top and seal tightly. Process in a water bath for preservation.
