  • Zest of 1 lime
  • Juice of 1/2 lime
  • 1 teaspoon vanilla extract
  • 1 cup almonds or cashews (optional crust)
  • 1/2 cup shredded unsweetened coconut (optional crust)
  • 1/4 cup Medjool dates (optional crust)
  • Pinch of salt

Instructions

  1. Prepare the optional crust: Blend almonds/cashews, shredded coconut, pitted dates, melted coconut oil, and a pinch of salt in a food processor until clumpy. Press into an 8×8 inch pan lined with parchment paper and chill.
  2. In a mixing bowl, whisk together coconut milk, chia seeds, maple syrup/agave nectar, lime zest, lime juice, vanilla extract, and salt until well combined.
  3. Allow the mixture to sit for 5-10 minutes before whisking again to ensure even distribution of chia seeds.
  4. Pour the chia pudding over the chilled crust and spread evenly if using one; otherwise, pour directly into the lined pan.
  5. Cover and refrigerate for at least 4 hours or overnight until firm.
  6. Once set, lift out using parchment paper overhang, cut into bars, and top with toasted coconut flakes and extra lime zest.
