  • 1 large sweet potato, peeled and cubed
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 5 ounces baby spinach or mixed greens
  • 1/2 cup crumbled goat cheese (or feta)
  • 1/4 cup toasted pecans (or walnuts), roughly chopped
  • 1/4 cup dried cranberries (or cherries)
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the beets and sweet potato; cut the red onion into wedges.
  3. Toss the vegetables with olive oil, thyme, salt, and pepper.
  4. Spread them on a baking sheet and roast for 25-30 minutes until tender.
  5. Allow to cool slightly before combining with baby spinach in a large bowl.
  6. Whisk together balsamic vinegar, olive oil, honey (or maple syrup), Dijon mustard, and garlic for the vinaigrette.
